RECIPES
 
CHOCOLATE COVERED CHERRY BROWNIES
1 packet Chocolate Covered Cherry Dip Mix
1 pkg. (19.8 oz.) Brownie Mix
1 (16 oz.) tub of chocolate frosting 
Preheat oven to 350°. Spread prepared brownie batter in 9x13" greased pan. Distribute spoonfuls of prepared Chocolate Covered Cherry Dip Mix evenly over top of brownie batter. Gently spread out using spatula or the back of a spoon.  Lightly cut into brownie batter (marbling) dip in, working right to left horizontally, and then vertically from top to bottom. Bake for 30 to 35 minutes. Do not overbake. Cool for 30 minutes. Open tub of frosting making sure ALL of foil seal/liner is removed. Microwave frosting for one minute- let set for 1 minute, stir and pour over baked brownies. Let brownies set for minimum of 1 hour before cutting/serving. Brownies will cut easier if you chill for one hour. Keep refrigerated. For special occasions, microwave and drizzle 1/2 tub of prepared cherry frosting on top of chocolate frosting. *To make a double batch, use a 12x17" pan and bake for 35 to 38 minutes.
 
 
HARVEST PUMPKIN & CHOCOLATE CHIP CAKE
1 packet Country Harvest Pumpkin Dip Mix
1 pkg. plain yellow cake mix
3/4 cup water
1/3 cup vegetable oil
3 large eggs
8 oz. pkg. cream cheese, softened
1 cup semi-sweet mini-chocolate chips
1 cup finely chopped pecans
1 Tbsp. powdered sugar, for garnish
Lightly mist a 12-cup Bundt pan with vegetable oil spray, then dust with flour.  Shake out excess flour and set pan aside.  Preheat oven to 350º.
Place cake mix, Country Harvest Pumpkin Dip Mix, water, oil & eggs in a large mixing bowl.  Blend with an electric mixer on low speed for 1 minute.  Stop and scrape down sides of bowl with a rubber spatula.  Add softened cream cheese.  Increase mixer speed to medium and beat 2 additional minutes, scraping sides again as needed.  The batter should look thick and well blended.  Fold in chocolate chips and pecans, making sure that they are well distributed.  Spoon batter into prepared pan, smoothing out with rubber spatula.  Bake cake in center of oven for 40 to 45 minutes, until lightly browned.
Remove pan from oven and place on a wire rack to cool.  Run a long, sharp knife around edge of cake and invert on a rack.  Slide cake onto a serving platter, dust with powdered sugar, slice and ENJOY!
 
HOT SPINACH-CHEDDAR DIP
1 packet Country Spinach Dip Mix
8 oz. sour cream
8 oz. cream cheese
1 cup shredded cheddar cheese, mild or sharp
In a medium glass bowl, place all ingredients and mix well. Microwave on high for two minutes; stir; microwave two more minutes; stir to blend completely. Microwave additional minute or until cheese melts and mixture is hot. Stir and serve hot or warm. Serve with tortilla chips, crackers, carrot sticks, or other vegetable dippers.
Crockpot method:
Place above ingredients into crockpot in this order:
  1) packet of
Country Spinach Dip Mix
  2) sour cream
  3) cream cheese
  4) shredded cheese
Place lid on crockpot, set on high, and allow cream cheese to soften. Mix well and place lid back on crockpot until dip is heated completely. Remove lid, turn down to low heat, and serve.
 
 
SPINACH ROLL-UPS
1 packet Country Spinach Dip Mix
1 c. mayonnaise
1 c. sour cream
3 green onions, chopped
1 c. water chestnuts, chopped & drained
8 oz. bacon, cooked & crumbled
10 large flour tortillas
1 c. (4 oz.) shredded cheddar cheese, mild or sharp
Mix all of the ingredients and spread on the tortillas. Roll the tortillas, cover with plastic wrap, and chill overnight. Slice each roll into 1-inch pieces. Makes 10 or more servings.
 
 
SUPER BOWL PARTIES MEXICAN LAYERED FIESTA DIP
Mix Chile Con Queso Dip according to directions. Allow dip to chill a minimum of 8 hours.

Step 1:    Brown 1 pound of ground meat (beef, turkey, or venison)
               drain meat and season with a taco seasoning. Allow browned,
               seasoned meat to cool
Step 2:    Spread dip on a platter or plate, leaving room around the rim.
Step 3:    Sprinkle (cooked, seasoned, cooled) meat over dip on
               platter.
Step 4:    Sprinkle shredded cheese over top of other layers.
Step 5:    Shred lettuce and sprinkle over entire platter.
You may garnish entire platter with chopped onions, chopped tomatoes, black olives, etc.  Use plain tortilla chips as dippers.

-You may use lowfat or nonfat products with this mix.
 
 
STUFFED MUSHROOM APPETIZERS
8 oz. cream cheese
1/2 tsp. Worcestershire sauce
2 tbsp. Parmesan Cheese
3/4 tsp.
Country Garlic & Herb Spread Mix
20-25 medium size mushrooms (clean and stems removed)
     Soften cream cheese. Add Worcestershire Sauce, Country Garlic & Herb Spread Mix and Parmesan Cheese. Mix well until blended. Fill mushrooms with cream cheese mixture. Place under broiler oven until light brown. Serve immediately
 
 
 
HAM GLAZE
1 packet Country Caramel Apple Dip Mix
1 - 20 oz. can crushed pineapple, undrained
     Place undrained pineapple in medium size bowl, add packet of Country Caramel Apple Dip Mix. Mix well with fork. Pierce top with fork several times. Spoon pineapple mixture on top of ham and bake accordingly. Baste occasionally during baking.
 
 
CREOLE CHICKEN & RICE
2 to 4 boneless, skinless chicken breasts
1/2 cup chopped celery
1 cup chopped green & red (sweet) bell peppers
1/2 to 1 cup chopped onion
1 Tablespoon
Country Creole Dip Mix (unprepared)*
Two 14-1/2-oz. cans diced tomatoes, undrained
1/2 cup water
2 to 4 cups hot cooked white rice.
     Preheat oven to 350 degrees. Rinse chicken and place in a 13x9x2 inch baking pan. Sprinkle one Tablespoon of Country Creole Dip Mix over chicken breasts. Next distribute celery, peppers and onions evenly over chicken breasts. Pour the 2 cans of diced tomatoes over all and top with water. Cover with foil and bake approximately 1-1/2 hours, or until chicken is cooked and fork tender. Serve over white rice.
     * Some like it Hot - in that case you can use up to 2 Tablespoons of Country Creole Dip Mix on chicken.
     This dish can be prepared the night before and baked the following day. Refrigerate until baking time.
 
EASY SPINACH LASAGNA
     This lasagna is perfect for freezing! Placing the mozzarella under the spaghetti sauce keeps it softer than if it were sprinkled over the top. If you want to keep your baking pan free for other uses, line it with aluminum foil. Once the lasagna is frozen, remove the foil and lasagna from the pan, wrap tightly, and you can use your pan again.
2 cups ricotta or small curd creamed cottage cheese
1/2 cup grated Parmesan cheese
1 package
Country Spinach Dip Mix (unprepared)
8 cups spaghetti sauce (homemade or store-bought)
12 uncooked lasagna noodles
2 cups shredded mozzarella cheese (16 ounces)
3/4 cup water
1/4 cup grated Parmesan cheese or shredded mozzarella cheese, if
    desired
     Mix ricotta cheese, 1/2 cup Parmesan cheese, and Country Spinach Dip Mix. Spread 2 cups spaghetti sauce in greased rectangular pan, 13x9x2 inches, top with 4 to 6 noodles. Spread cheese mixture over uncooked noodles. Spread 2 cups spaghetti sauce and top with 4 to 6 noodles, repeat with 2 cups mozzarella cheese. Spread with remaining spaghetti sauce. Sprinkle with 1/4 cup Parmesan cheese. Pour water over all. Preheat oven to 350 degrees. Cover with aluminum foil and bake 30 minutes. Uncover and bake about 30 minutes longer or until hot and bubbly. Sprinkle with mozzarella cheese. Let stand 15 minutes before cutting. 8 servings.
 
 
FLUFFY PUMPKIN PIE
Follow directions on package to prepare Country Harvest Pumpkin Dip Mix. After whipping with mixer, fold in an 8-ounce container of whipped topping. Spoon mixture into a ready made graham cracker pie crust. Garnish with 1/2 cup of chopped walnuts or pecans. Chill 4 hours before serving. May also use individual size dessert shells.
 
 
QUICK AND EASY ENCHILADAS
1 cup Country Chile Con Queso Dip Mix (prepared)
6 flour tortillas
1 can Enchilada Sauce
2 cups shredded Cheddar Cheese
1 lb. cooked ground beef with taco seasoning or cooked chicken or
     turkey
1/2 cup chopped onion
1/4 cup red, green and yellow peppers chipped
1/4 cup sliced olives
     Preheat oven to 350 degrees. Coat 9x13 pan with non-stick cooking spray. Spread Country Chile Con Queso Dip Mix onto each flour tortilla. Place meat in center, cover with cheese, onion, peppers and olives. Roll tortilla, place seam side down into dish. Pour Enchilada Sauce over tortillas. Bake for 15 minutes. Top with extra cheese and onion. Bake for 5 more minutes or until cheese is melted. Makes 6 enchiladas.
 
 
 
MEXICAN BEAN "SALAD" DIP
15-1/4 oz. can whole kernel corn, drained
15-1/2 oz. can pinto beans, drained/rinsed
15-1/2 oz. can blackeye peas, drained/rinsed
14-1/2 oz. can diced tomatoes
8 oz. can tomato sauce
1 cup water
1 packet
Country Salsa Mix
1 teaspoon salt - optional
     Mix all ingredients together. Let set overnight. Stir before serving. Serve with tortilla chips
 
 
GARLIC BREAD
     Simply add 3/4 teaspoon of Country Garlic & Herb Spread Mix and 1/8 teaspoon Worcestershire sauce to 4 oz. (1 stick) butter or margarine (softened). Mix well, spread on bread and bake until golden brown.
 
 
CREOLE TORTILLA BAKE
2 pounds ground beef
2 tablespoons
Country Creole Dip Mix (use 3 tablespoons of mix for
     spicier version)
1 cup chopped fresh onion
2 tablespoons vegetable oil or margarine
1 tablespoon fresh minced garlic or 1 teaspoon dried minced garlic
1 cup chopped fresh tomatoes
1/2 cup chopped green bell pepper
18 small flour tortillas
2 cups salsa of your choice
2 cups sour cream
8 oz. shredded cheddar cheese
     Brown onion and green pepper in vegetable oil, add ground beef and garlic and cook meat thoroughly. Drain off any fat. Add 2 to 3 tablespoons Country Creole Dip Mix and chopped tomatoes. Mix well. Cook over low heat for 3 minutes. Spoon small amount of meat mixture into a center of each tortilla, roll up and place in one layer in a greased 9x13 inch baking pan. Spoon salsa over tortillas, evenly spread sour cream and sprinkle shredded cheese over all. Bake 350 degrees for 30 minutes, or until cheese is melted.
